Chicken & Zucchini Poppers
Yield: 4-5 servings
Ingredients:
1 lb. ground chicken breast
2c grated zucchini
2-3 green onions, sliced
3-4 Tbsp cilantro, minced
1 clove garlic
1 tsp salt
½ tsp pepper
¾ tsp cumin
olive oil, coconut oil, avocado oil, or ghee for cooking
Directions:
Mix all ingredients except oil.
Heat oil in frying pan.
Scoop meat into balls and cook about 5-6 minutes on each side.
Bake: Place meat balls on greased baking sheet. Drizzle additional oil over the meatballs. Bake at 400° F 20-25 minutes. Broil 2-3 minutes.
